Brownie Pudding

Back in the 1970’s when microwaves were the height of modern technology, my mom took a microwave cooking class.  Since it was a new cooking appliance, people back then hoped and expected that entire meals could be cooked in mere minutes.  Of course, not many people nowadays use the microwave for real cooking, unless perhaps, it’s popcorn.  However, with high hopes, my mom took a class and tried many recipes, some of which were doable and others that were barely passable.  This one, though, has endured.  I only make it a couple times a year, but oh, it is so chocolatey good!  I’m not a big pudding fan, but there’s something about the heated brownie-ish cake swimming in a sea of a warm, sweet, pudding-like sauce.  The fact that it can be made in about 15 minutes only adds to its charm…  Trust me, when you’re jonesin’ for a warm, gooey, chocolate dessert, and you don’t want to take the time to make cookies or cake, make this.  You won’t be disappointed!

Brownie Pudding

For pudding, in a 1 qt. microwavable container, mix together:

1 C. packed brown sugar

2 C. very hot water

1/4 C. butter

1/4 C. cocoa

Microwave on high for 4 minutes.   While microwaving pudding, in separate 2 qt. bowl mix brownie together:

1 C. sifted flour

1 C. sugar

1 C. milk

1/4 C. cocoa

2 t. baking powder

1 t. salt

1 t. vanilla

Pour hot pudding over brownie mix in the 2 qt. dish.  Sprinkle with 1 C. chopped nuts.  Microwave on high for 9 – 12 minutes.  Serve warm & enjoy!
